Hello everybody! I invite you once in a while to some French festive dinners and cooking classes! When I was younger, I worked in French restaurants in Los Angeles and New York, first as a cook and then as a pastry chef.

I would be happy if you could share with me my favorite some classics of French gastronomy which I prepare according to some old family recipes. Do you like sauces and butter? I love them and that is why work a lot with sauces, even when they require long hours preparing some veal stock or a demi-glace. I also cannot imagine a good meal without a tasty dessert! What about famous tarte Tatin melting in your mouth, crispy millefeuille with homemade puff pastry or orangey and buttery Crêpe Suzette? I love to meet new people, but even more I love to cook and eat with people! If you are curious about authentic French flavors and tastes, please make a stop in the heart of Old Kraków. For the first time I took the risk and decided to spend New Year’s Eve as suggested by Eataway.

Why risk ? It was not about the food (I had heard a lot about Pascal Chevriaux’s cooking

reputation) but about the ambience. New Year’s Eve time is to have fun, welcoming new hopes

and saying good bye to old sorrows. Spending the time of joy in a company of several unknown

people always requires social skills and tolerance.

Needles to say, this exceptional evening was simply excellent. True international company

(USA, Korea, Canada, Poland, Netherlands, Norway) only brought multicultural flavor to the

table of fifteen people. Everybody enjoyed so much that the primary plan to end the dinner

after 11:00 pm and attend the famous New Year’s event at the Krakow Market Square was

abandoned. We stayed until 1:00 am, talking, laughing, exchanging ideas and drinking lots of

bubbles and excellent wines carefully paired with food by Pascal.

Ah, food. It was really a feast, very elegant vrai dinner Parisien. We started with the amuse-

bouche with foie gras, fig chutney and toasted brioche. It was finger-licking good, the chutney

and brioche homemade by Pascal. Then came warm appetizer - stuffed savoy cabbage with

shrimps and sauce à l'a méricaine. Pascal is the real sauce master and deserves three stars right

upfront ! At this moment I silently counted on the trou Normand since I have been spoiled

Calvados aficionado for decades. It did not appear but it was inexpensive home dinner, not the

wallet-sucking expensive French restaurant. Pascal continued with boeuf à la Gérard Depardieu,

gratin dauphinois. The meet was literally melting in your mouth and it swam in a bath of

heavenly liquid. I think that the greatest value of Pascal’s cuisine is its delicacy and perfect

balance of flavours. And this is what the best chefs are appreciated for. After solid glasses of

red Côtes du Rhône (before it we had white wine from Loire Valley) time for desserts came.

First famous seasonal galette des Rois, and last – but not the least ! – tiny wonderful French

macarons for which Pascal is already widely respected in the city of Kraków.

To finish this a bit too long story: It was a memorable time provided by Pascal & Magda (his

Polish wife). Each of the guests said the same upon leaving their home into the fireworks

enlighted first night of 2016.

If you want to learn how to make French pastries, you should definitely visit one of Pascal’s classes! Thorough experience, patience and good recipes. He is the best in the city for the French macarons!

What a fabulous night, food perfect, wines perfect, hospitality from Pascal, wife, family & guests was superb. Great way to meet people, if in Krakow, do not miss the Pascal hospitality!
