What to expect: a session in someone's kitchen, usually around three hours, where you cook two to four dishes from start to finish and then sit down to eat them. Most hosts adapt their normal menu around vegan requirements rather than running a separate menu, which is actually how Polish home cooking has worked for centuries. Everyone adjusts around fasting periods.
Supply on this niche is thinner than Kraków's, so if specific dates don't work for you, send a request to one of the cooks on the "available on request" list below. Several Gdańsk hosts will happily re-run an experience for a confirmed party of three or more.

The cuisine itself helps. Pomeranian cooking is built around root vegetables, mushrooms, smoked fish (the only obviously non-vegan piece), grain breads, and the long Baltic tradition of fermenting cabbage and beetroot through the winter. Pull out the fish and you're a long way there.
