Magloubeh is one of Jordanians and Palestinians favorite dishes where it should be repeated on a weekly basic. It is an upside down dish, where it has rice, fried vegetables (cauliflower or eggplant, and potato and carrots), with chicken or lamb meat. It is layered in the cooking casserole and cooked together. The first layer would be the meat/chicken, then the fried vegetables then the spiced rice. All are cooked with the soup of chicken/meat. Then served over a big metallic plate. It is eaten with some green salad and/or yogurt.
Each house does its Magloubeh differently but the main ingredients and way of cooking are one. The challenge always is to be able to have perfect one piece of Magloubeh after it is served on the big plate, like you see in the above picture.
