You are going to visit Kraków, a historical and beautiful city... what about joining me and my family for a Polish meal? The summer in Kraków may be very hot, so you probably would like to taste something that cools down...maybe our specialty - "chłodnik", a chilled soup made from buttermilk, baby beets, quail's egg and crayfish? As an appetizer, I will serve an assortment of Polish style tapas like one bite tartines with local cheeses, sausage and fish. Or maybe a salad with fresh "bundz" cheese, from the Tatra mountains, and local tomatoes (in summer they may be good, too).
All products come from Stary Kleparz, the most renowned food market in Kraków, and Targ Pietruszkowy (The Parsley Market) – the organic food market in Kraków!

APPETIZERS:
Assortment of Polish style tapas, one bite tartines with local cheeses (oscypek, bryndza, bundz) sausage (lisiecka, sucha krakowska) and fish (pstrąg ojcowski / matjes herring) and or spreads depending on the available products
Salad with bundz cheese (fresh, sheep's cheese), tomatoes and linen oil
Home made puff pastry with nigella seeds
Grilled sheep's cheese (oscypek) with home made bilberry preserves
SOUPS:
Chłodnik – Polish chilled soup (butter milk, young beets, cucumber, quail's eggs, crayfish) - vegetarian option on request
Botwinka – warm soup of young beets
Garlic soup with mint
Borscht - traditional sweet and sour soup from beets with homemade starter made from fermented beets
Żurek - traditional sour soup with sausage, eggs, potatoes
MAINS:
Home made pierogi with lamb, brown butter, mint and fava beans
Home made pierogi with spinach and bryndza cheese, sour cream
Cabbage rolls (buckwheat and wild mushrooms – vegetarian or meat and rice) tomato or mushrooms sauce
Braised Limousine beef in dried forest mushrooms, young cabbage, baby potatoes / buckwheat
Braised lamb, baby potatoes, young cabbage
Baked duck, sauerkraut, potato dumplings ("kopytka")
"Kaszotto" with forest mushrooms (depends on availability of mushrooms)
Potato pancakes with forest mushrooms (depending on the availability of mushrooms)
DESSERTS:
"Kremówka" style cake – home made puff pastry, vanilla cream, strawberries / raspberries

Over the last few years, I have developed my passion for gastronomy, working as a food writer. I am addicted to everything that is connected with food; I like to find out about the history of each food item or food preparation. Where do pierogi come from? What is the history of some famous Polish soups, such as żurek or bortsh? I love modern books about food, but I am really into old cookbooks which are a great source of inspiration! I spent several years in France and my cooking sometimes has a little French touch, but always remains Polish. It will be great if you could join me at for my pierogi class or a dinner. My place is located nearby the Old Town of Krakow. I am curious about where you come from and whether you will be happy to discover tasty Polish classics and some great local products which I will buy for you on my favorite food markets. Polish cuisine is great and is full of treasures which should be shown to the entire World!

My wife, Stephanie, and I thoroughly enjoyed the above class with Magda. She was a gracious host who made us feel right at home.
Magda gave us the choice of doing as much or as little as we choose during each part of the process. We took up on this choice and did those things that fit our individual skills while learning something about those aspects of making pierogis that we did not know beforehand. She took us step-by-step through the pierogi-making process from describing what ingredients were in each of the fillings, to making the dough, thru stuffing the pierogis and finally how to cook them. She explained what each topping for each type of pierogi was and why she used it. Finally we sat down with her and her family and enjoyed the fruits of our labors. The final products were great! We ate as much as we could and had a very enjoyable day.

Last week I had really wonderful evening at Magdas! I came with two American friends - Sommer and Amanda to taste a home-made meal. We had chance to eat a delicious:
-one bite sandwiches (tartinka) with herrings, "bryndza" cheese and lisiecka sausage;
-2 kinds of sheep white cheese (bundz);
-clod soup from beetroot (chłodnik litewski);
-lamb dumplings
and Pascals cream-cookie!
